Fudge Brownie Pie

I love it when people pity me for being gluten free. It's a tough life I lead. I have to eat horrible things, such as this... This recipe was sent to me by a friend. Once I read that it made it's own crust, I was in. It reminds me of this recipe, but I actually like this one even better. This is a great brownie recipe if you don't have a box mix on hand. Just use a 9x9 pan instead of a pie pan.

Fudge Brownie Pie
1 stick of butter (melted)
1 cup of sugar
1/2 cup of coco
1/4 cup of flour
1 teaspoon of vanilla (I used potato starch)
2 eggs

Mix all ingredients together and pour into a sprayed pie pan. Bake at 325 for 25 minutes. The secret is to take it out of the oven before it's completely cooked. The middle should not be completely done. Don't worry, the warm pan will finish baking it. It makes it's own pie shell. You can also make these into lovely little cupcakes. Delish.
