Fluffy Flourless Cornbread

Don't adjust your monitor. The cornbread above is supposed to be that blueish tint. And no I don't enjoy molded bread. I got blue cornmeal in my CSA quite a while back from blue corn. I used it tonight to make my sister's awesome cornbread. It is pretty much naturally gluten free, fluffy, and delish. If you are not gluten free, it's still yummy and easy. And FYI I usually use plain old yellow cornmeal.

Cornbread:

1 cup milk
1 egg
1/4 cup oil
1/2 cup corn starch
1 cup cornmeal
1 t salt
4 t baking powder
1/3 cup sugar
1/2 tsp xantham gum or corn starch

Mix all. Bake in a greased 9x9 pan for 25-30 minutes at 375 degrees. This also makes good muffins.
