I grew up on this delicious soup. I know their are so many versions of potatoe soup. But this is my mom's own recipe. It's a simple, yummy comfort food that uses my local csa potatoes. It can be tweaked very easily for any special food requirements you may or have. And if you are lucky enough to not have any food issues, it's great just the way it is! So easy, so few ingredients, and most are on hand. Enjoy.
Potato Soup
7-8 Yukon gold potatoes, chopped into small cubes
Milk (your choice- regular, low fat, soy, cream, whatever you prefer)
1 Onion, chopped
Salt, Pepper to taste
Chop potatoes. Place in a pot and pour enough water in just to cover them. Bring to boil on stove top. Boil for 15-20 minutes, stirring occasionally. In the meantime, saute onions in a bit of oil over the stove top until tender. Once tender, add to potatoes. Add salt and pepper to taste. After potatoes or soft, reduce heat and add about a cup of milk. Basically until creamy. Soy milk tastes great in this, fyi. Heat about 5 more minutes. Serve plain or with crumbled bacon and cheese. Sometimes simplicity makes the best recipes!

You know, Mom usually adds a can or 2 of evaporated milk also. That's what makes it so yummy!
